Snappers Recipes

Tempura Batter 1500ml cold water 2 handfuls table salt 3 teaspoons baking soda 5kg self raising flour 500gms corn flour 1 handful MSG (optional) Iced water to fill drum (20 litres) up to 80% Mix ingredients thoroughly and leave batter in cool room for at least 1 hour. Stir batter clockwise with whisk Chicken Salt 12 scoops of salt ½ scoop of hungrarian red paprica (sweet) 1 scoop lemon pepper 1 scoop chicken booster Salmon Patty Recipe 10kg mashed potatoes 1 bunch chopped parsley 12 cans of 420gm Salmons 3 teaspoon ground white pepper 3 big tablespoons of chicken booster 300 g margarine 10 cups breadcrumbs deep fry in oil Chopped white onion, spring onion and parsley mixed with mashed potatoes. Drain Salmon reserving 1/3 liquid. Remove all bones and flake with fork Combine with mashed potatoes and seasons with chicken booster, chicken salt, margarine and salmon mix. Form into patties and coat with bread crumbs.
