Baked Pork Loin w/Apples n Scalloped Potatoes

Sear the Pork Loin in a little olive oil with Sliced apples, carrots, celery, onion, garlic, thyme and Rosemarey. Then add a mix of Whole Grain Mustard, Apple Cider Vinegar and Apple Cider(I did equal parts mustard and vinegar then about a 1/2 a cup of apple cider) Directly over the top of the pork. Bake in the Oven at 350 for about 20 minutes a pound or till desired internal Temp is reached.... I take the lid off towards the end to really brown it up.
I cheated this time on the Taters and got a box of Betty Crocker Scalloped, they were good!

Baked apple on top of a bite of the pork...NO can Defense!!
