Big Mac

If you’re an 80’s baby or younger you probably remember the Big Mac commercials. And my guess is you think you already know what the “special sauce” was (hint: it’s not just thousand island dressing). But when I tried to make them at home it never tasted the same… until now. You’ll never beat the fake meat cheapness of the golden arches, but this homemade recipe tastes so much better the Hamburgler might start robbing you instead.

Ingredients:

  • Sesame Seed Bun (Durr)
  • Onion
  • Lettuce (Iceberg is preferable)
  • Cheddar Cheese, sliced (Fresh bests packaged)
  • Beef… the leaner the better (80% is good)
  • Dill Pickles

And for the special sauce:?1 cup of miracle whip/mayonnaise?1/3 cups of sweet relish?1/4 cup of French salad dressing?1 tablespoon of sugar?1 teaspoon of pepper?1 teaspoon of dried minced onion (in the spice aisle)?**Note: Make the special sauce let it refrigerate for an hour before using.

KFC chicken

Colonel Sanders got nothing on this recipe. Seriously. This isn’t just any fried chicken recipe; follow these instructions and your bucket will taste just like KFC… PLUS, it’ll be healthier since your chicken isn’t pumped full of steroids. ?To prepare, marinate chicken for an hour, apply wet coating then drop chicken into bag containing dry coating. Refrigerate bag (containing chicken and coatings) overnight and fry the following day.?Ingredients
Chicken (I prefer free-range, but suit yourself)
Marinade:

  • Chili powder
  • Coriander powder
  • Garam Masala powder
  • Freshly grinded pepper (Much tastier than powdered pepper… trust me)
  • Ginger-garlic paste
  • Lemon juice (Enough to thinly coat chicken)

Coating:

  • Wet coating
  • Option 1: Egg Wash
  • Option 2:Flour paste, made by adding water
  • Dry coating
  • Bread Crumbs (1 cup)
  • Flour (1/2 cup)
  • Pepper (2 tablespoons) *Optional*

Taco Bell Supreme

  • Beef, ground (1 pound) *Leaner= Healthier *
  • Flour, all purpose (1/4 cup)
  • Chili powder (1 tablespoon)
  • Salt (1 tablespoon)
  • Dried onion, minced (1/2 teaspoon)
  • Paprika (1/2 teaspoon)
  • Onion powder (1/4 teaspoon)
  • Garlic powder *Sprinkle to taste… but don’t go overboard*
  • Water (1/2 cup)
  • Refried beans, canned (16 ounces)
  • Flour tortillas (Eight 10-inch pieces)
  • Enchilada sauce (1/2 cup)
  • Sour cream (3/4 cup)
  • Lettuce, shredded (2 cups) *Iceberg is best*
  • Cheddar cheese, shredded (2 cups)
  • Tomato, medium sized and diced (1 should be enough)
  • Yellow onion, diced (1/2 cup)

First prepare the base by mixing together the beef, flour, minced onion, garlic powder, chili powder, salt, paprika, minced onion, and onion power and in a bowl. Drop the base in a skillet with the water, and put it on medium flame. Stir and cook until brown (should take about 5 minutes or so).
Next you heat up your refried beans and tortillas in the microwave. Put together all ingredients in the following order: tortilla, beans, beef base, enchilada sauce, lettuce, cheese, tomato, onion and THEN the sour cream. Done


BK Whopper

A homemade Double Whopper is slower than hitting the drive through, but it’s half the price and twice as good… and that’s using the best beef in the supermarket. The following recipe is more for an uber-Whopper, but you can break the patties into two instead of one if you don’t mind a slight loss in juiciness. Just make your patties, put em in the buns and add sauces and your ready to eat.
Ingredients:

  • Beef, ground (6.7 ounces) *85% lean*
  • Hamburger bun
  • Mayonnaise (1 tablespoon)
  • Ketchup (1 tablespoon)
  • Pickles *Dill pickles are personally preferred*
  • Tomato, sliced (3 slices)
  • Onion rings, white *Add to taste*
  • Lettuce (1/2 leaf)

Wendy's Frosty

What you need:

  • Ice water (2 cups)
  • Dry milk powder (1½ cups)
  • Sugar (2/3 cup)
  • Unsweetened cocoa (1/4 cup)
  • Vanilla (1 teaspoon)
  • Ice cubes (2 trays)
  • Corn oil (2 tablespoons)

Non-stick spray, 5 second spray *helps the emulsification process*


Arby's Sauce

Who doesn’t love Arby’s BBQ sauce? And, what if I told you making it at hope tastes even better? Here’s how you do it…?Mix these together:

  • Ketchup (1 cup)
  • Water (2 teaspoons)
  • Garlic powder (1/4 teaspoon)
  • Onion powder (1/4 teaspoon)
  • Pepper (1/4 teaspoon)
  • Salt (1/4 teaspoon)
  • Tabasco pepper sauce (1/2 teaspoon)

** Heat your sauce for 5 to 10 minutes, and then allow it to cool. Voila! The best BBQ sauce in town.
